- 2 packages Costco fire roasted vegetables
- 2 cup vegetable broth
- ½ can tomato paste
- 1 can diced tomatoes (roasted garlic, herb, any flavor will do)
- 2 cans kidney beans – drained and washed
- Dump everything in a 6 quart slow cooker on high for four hours.
- Serve over rice, quinoa, or with chickpea fritters.
- Makes six servings.
