Roasted Vegetable Stew with Sicilian Chickpea Fritters

 Fire roasted vegetable three been stew with homemade chickpea "chips"


  • 2 packages Costco fire roasted vegetables
  • 2 cup vegetable broth
  • ½ can tomato paste
  • 1 can diced tomatoes (roasted garlic, herb, any flavor will do)
  • 2 cans kidney beans – drained and washed


  1. Dump everything in a 6 quart slow cooker on high for four hours.
  2. Serve over rice, quinoa, or with chickpea fritters.
  3. Makes six servings.
