Black Bean Burger with Spicy Sweet Potato Wedges

Black Bean BurgerIngredients:

  • 1/2 onion, diced
  • 1 can black beans, well drained
  • 1/2 cup flour
  • 2 slices bread, crumbled
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp seasoned salt
  • salt and pepper to taste
  • 2 flax eggs
  • ½ already cooked baked potato
  • 3tbs sriracha
  • Cumin, Paprika, Chili Powder, Salt, Pepper
  • 2 large sweet potatos
  • vegetable oil

Preparation:

  1. Preheat the oven to 375 degrees.
  2. Chop the sweet potato in to thick wedges.
  3. Lightly oil a cookie sheet and add the potato wedges, tossing so they are coated evenly with the oil.
  4. Then sprinkle one layer of each of the following spices: cumin, paprika, chili powder, salt and pepper. Toss again to coat each potato and bake at about 374 for 20 mins or until crispy and browned.
  5. For the burger… Sautee the onions in a medium pot until soft and clear.
  6. In a large bowl, mash the beans until almost smooth. Add sauteed onions and the rest of the ingredients, except the oil, adding the flour a few tablespoons at a time to combine well. Add the cooked potato and flax eggs to help bind the mixture. Mixture will be thick.
  7. Form bean mixture into patties, approximately ½ inch thick and fry patties in a small amount of vegetable or canola oil until slightly firm.
  8. Serve with your choice of green. Makes about 2-3 servings.
